Canadian-born Tadd Chapman is the father of Mexican fusion cuisine. He opened his first Los Cabos restaurant, The Tulip Tree, in 1998. His further restaurants, including Habaneros Gastro Grill, Don Sanchez and Retro Burger, have established him as a celebrity chef in Mexico. See taddchapman.com.
