That is, lean protein (chicken), smart carbs (sweet potato), non-starchy veg (leafy greens and cauliflower) and a dash of healthy fat (olive oil).
It’s simple to make and variations of this salad will also work perfectly e.g. leafy greens, lean beef strips, chilli spice blend and asparagus served with a few small salad potatoes.
Need: Extra virgin olive oil, 1 chicken breast, sliced, 2 tbs dukkah, 1 sweet potato, ½ head of cauliflower, cut into florets, baby spinach and rocket salad mix.
Make: Preheat oven to 180c; lay potato, cauliflower on tray lined with baking paper, drizzle with olive oil and bake 20-30 minutes. Toss chicken in dukkah, cook until golden brown. Combine 2 tbs tahini, juice half lemon, 2 tbs water in a bowl, toss. Serve while warm.
