Maple and tahini sweet potato chips

  • 2 medium sweet potatoes, cut into thin chips
  • 2 TBS tahini paste
  • 2 TSP maple syrup
  • 1/4 - 1/3 cup water
  • Handful of chopped parsley
  • 1 TBS sesame seeds
  • Extra virgin olive oil
  • Salt

Preheat the oven to 180C and line a large baking tray with baking paper. Evenly arrange the sweet potatoes on the baking tray, cook for 30 minutes, or until tender. Make the dressing by mixing together in a small mixing bowl. Drizzle over the potatoes.
