One once worked for the Bureau of Meteorology, the other as an engineer, but both put in a labour of love to transform their “cow paddock” land into a respected business.
After nearly a decade’s labour, however, the two are ready to retire. The 37-hectare property on Crookwell Road, overlooking Sooley Dam, is up for sale.
“Like they say, the land owns you, and it’s a lot of hard work,” Mrs Spark said. “It’s time to have a break, and do a bit of travelling.”
She admitted to having little interest in gardening before, but grew to enjoy the job. Mr Spark said he had never stopped learning throughout the experience.
“Every year is better than the last,” he said. “We’re pleased with the outcome and what we have achieved.”
Mrs Spark hopes the property continues to flourish. “I hope it expands, and the winery is joined with a restaurant, because it is a beautiful location,” she said.
