To help kick off the good food vibes, here are three simple and speedy meal ideas.
FRITTATA
This is my number go-to when I’m strapped for time.
Simply sauté a whole bunch of vegetables such as spinach, mushroom and zucchini, whisk up a few eggs (I tend to use around six for my family of three) and pour over the vegetables.
Dot it with some feta cheese, cover with a lid and cook on a medium heat for 5-10 minutes.
Remove the lid and place under the grill for 5 minutes until golden. Serve with a colourful salad.
BARBECUE CHICKEN SALAD
Remove the skin and shred a pre-cooked chook from the deli. Portion out the amount you require and get creative with various salad ingredients.
I like to use tinned chickpeas, cherry tomatoes, cos lettuce and sliced capsicum, tomato, red onion and avocado.
You also have my full permission to use a delicious dressing. A simple combo of extra virgin olive oil, balsamic vinegar and pinch of salt works a treat.
SAN CHOY BAU
This recipe is dead easy. Sauté 500g chicken mince and a packet of dry slaw in a little olive oil.
Add in a splash of soy, fish and sweet chilli sauce, mixing well to combine. Serve in a crunchy cos lettuce cup.
