They wish to announce they now have the Lions Christmas Cakes available in the following retail outlets.
McGeechans Rural Supplies, Commonwealth bank, NRMA, Uplands Pasture Motel, MD and JJ Anderson, Duncombe and Co and also at the Bigga, Binda and Tuena general stores.
Some of the members have also self-published a recipe booklet with ‘tried and true’ recipes. The booklets are $5. The Gazette will print a couple of recipes from the booklet on the leadup to Christmas.
Pesto
50gms pine nuts, 100gms fresh basil leaves, 3 garlic cloves, salt and pepper, 25gms parsley leaves, 150gm grated parmesan, 70mls olive oil. Saute the pine nuts in a pan until lightly toasted, blend the basil and parsley with the garlic. Add the pine nuts and cheese, slowly add the oil to blend the ingredients. Season, keep in an airtight container in fridge.
