Healthy bite sized muffins

Ingredients

  • 2 eggs, lightly beaten
  • 1 medium zucchini, grated
  • 2 ripe bananas, mashed
  • ½ cup almond meal
  • 1 3/4 cups self raising flour
  • 1/3 cup honey
  • 1 TSP baking powder
  • ¼ cup extra virgin olive oil
  • 1/4 cup Greek yoghurt
  • 1 TSP vanilla essence
  • Pinch of cinnamon

Preheat oven to 160c and ine a muffin tray with papers. Combine all ingredients in a large mixing bowl. Cook for 40-50 min or until lightly golden and skewer comes out clean
