Just in time for Easter: Chocolate sweet potato cake

Ingredients: 1 cup mashed sweet potato, ½ cup ricotta, 2 eggs, 1/2 cup extra-virgin olive oil, 1 TSP vanilla essence, ½ cup plain flour, sifted, ½ cup wholemeal flour, sifted, ¼ cup brown sugar, ½ cup cocoa powder, ½ cup dark choc chips, 1 TSP baking powder, 1 TSP bicarb soda. Oven 180c. Beat together the potato and wet ingredients. Melt the chocolate and stir through the bowl of wet ingredients. In a separate bowl mix together dry ingredients then add. Pour into a lined baking tin and bake for 40 minutes.
