- 1 cup grated potato
- 1 cup grated vegetables (e.g. carrot/zucchini)
- 2 eggs
- 2 TBS flour
- ½ cup tasty cheese
- Pinch of salt
- Olive oil – for cooking
Combine all ingredients in a bowl and dollop small amounts of batter in a pan. Cooking a few minutes each side until golden.
