A salad for lunch can have you feeling nourished and full until your next meal or snack – or it can leave you looking for lunch No.2!
Getting your salad balance is key to keep full throughout the afternoon. Here are my five favourite ways to create a delicious and ‘hearty’ salad.
Make it colourful
A salad base of colourful plant food is a fabulous way to boost your intake of vegetables. Pre-washed salad leaves make for a simple base, and if you feel inclined mix through some grated carrot, sliced capsicum – really, just go for whatever you have in the fridge. Leftover cold roast veggies like pumpkin and carrot also work a treat.
Power up with protein
Protein packs a filling punch. To keep hunger at bay, be sure to add in some shredded BBQ chicken, left over roast meat, tuna, tofu or even a boiled egg.
Carbs for fuel
Without them, say hello to sugar cravings at 3pm! ‘Smart carbs’ like sweet potato, 4-bean mix, a handful of cold pasta, tinned corn or a diced, cold potato will keep your energy soaring all afternoon long.
Avocado, olive oil, tahini (great with lemon) and even nuts are a wonderful way to add that fabulous mouth feel and to keep you fuller for longer.
Make it pretty
There is no other way to put it, a salad made of iceberg lettuce with sliced tomato and cucumber = boring! Make your salad really ‘sing’ by topping it with delicious additions such feta cheese, pomegranate, dried cranberries, sunflower seeds or even thinly-sliced peach.
