The restaurant at the Crookwell Services Club was named for their newborn daughter.
"Everley's was a mutual decision between my wife and I as it is the name of our recently born baby girl, Everley," Mr Mitchell said.
Their daughter was born in April this year.
"It is a new direction for the club's catering," club general manager April Gay said
"To bring a fresh and more modern menu as we enter into the warmer months."
The menu which is still being fine-tuned will include some dishes like gnocchi, boscaiola and gamberetti as well as new chicken dishes.
Most of the new menu items will be made in-house, chef Mitchell said.
Mr Mitchell has been working in the kitchen since the late 2000s, and cooking since 2011.
Five of those years were spent in senior positions to now owner and executive chef.
Mr Mitchell has taken over the operations of the kitchen and is running the business as a sole trader, similarly to new coffee shop Grind at the Criterion Hotel, which opened earlier this year.
