William James Cashmere, 27, fronted Goulburn Local Court on April 20 where he pleaded guilty to two counts of assault.
Police documents revealed Cashmere was drinking with the first victim at the Crookwell Hotel on February 19 when the man allegedly made inappropriate comments about his (Cashmere's) girlfriend.
CCTV footage showed Cashmere followed the man into a smoking section of the pub about 1am and then subsequently to the beer garden. While there Cashmere put his drink down and punched the victim in the jaw, causing him to fall to the ground.
The court heard the victim appeared to lie motionless on the ground before Cashmere landed a final blow, kicking him in the head region.
The victim remained in a semi-conscious state for 15 minutes before police arrived. The man was taken to Goulburn Base Hospital, suffering from short-term memory loss.
Police documents said that police made numerous attempts to locate and arrest Cashmere during the following two weeks until he surrendered himself to Goulburn Police Station on March 2, where he was interviewed and charged. He was granted bail at the time.
A fortnight later Cashmere carried out another unprovoked assault, this time on his girlfriend's ex-partner outside Goulburn Base Hospital.
The court heard Cashmere headbutted the victim in the chest without warning.
The victim walked to the emergency room. Cashmere presented himself to Goulburn Police station on March 9 and was released without charge pending an investigation.
Police then obtained CCTV footage showing Cashmere headbutting the victim, prompting police to charge him.
In court on Wednesday, Magistrate Geraldine Beattie accepted two character references provided by Cashmere and noted the police report said he had "appeared genuinely remorseful for his actions".
However she held off sentencing Cashmere, citing the need for a background report.
Cashmere, who represented himself, will return to court on May 9 for sentencing.
